Mark Cella On Ethics And Values

Mark Cella on Ethics and Values

An Example Of Personal Ethics Could Change Society.

How does one become an example of personal ethics, and what should we base our ethics on? Most people base their ethics on feelings and emotion.

But following your feelings does not always lead to ethical behavior. Think about what would happen if everyone acted out in anger. Religion, by itself, is also not the most reliable basis for ethics.

Although many religions promote high ethical standards, what about people of different faiths with differing ethics? If ethics is based on religion, how are atheists supposed to know how to act?

Mark Cella on Societal and Personal Ethics

Obeying the law is no guarantee of ethical behavior. Laws change; ethics should not. And there are countless examples of unethical laws throughout human history.

Perhaps we should base our ethics on whatever society accepts. But this is no solution because whole societies can be unethical, such as Nazi Germany.

And how would we even know what ’society’ accepts? Are we to take a public opinion poll every time a question of ethics arises?

Morals are the way we act. Ethics is the way we should act.

Ethics has a societal and a personal meaning. In general, our personal ethics should be reflected in our relationship to our society. Ethics impacts our understanding of rights, obligations, and privileges.

Mark Cella on Societal and Personal Ethics

Our societal ethics should be well-founded and should reflect our personal ethics. If it is a good thing for a person to be honest in their personal relations, it is also good for a person to be honest in their public dealings. And it is also good for our society to be one where honesty is encouraged and honored.

Personal ethics means that the way we expect others to act in public, we should act in private. It means that we should expect and strive toward excellence and honorable relations with our personal friends and acquaintances, as well as our society. This, of course, requires that we closely examine our personal ethics.

If we pay attention to our personal ethics, and make sure that we are ethical in all aspects of our lives, societal ethics will improve naturally. It does not work the same the other way around, however, because we know that society is not always a good basis for personal ethics. Of course, someone should tell that to Congress.

Our societal ethics flow from our own personal ethics, and not the other way around. This concept is fundamental to improving our society. If we tried to change societal ethics through direct mandate, we would run into the problem of basing ethics on the law. It would be a self-defeating endeavor.

Fixing A Misunderstanding With Your Partner

August 5th, 2010

It is never easy for anyone to fight, especially with your spouse.

I know arguments are rough and no one ever likes to get in them or carry them on. If you are in an argument with someone you love, it is a good thing you are reading this article, because we are going to discuss how to resolve your arguments and hopefully make you relationship stronger in the process.

Communication is key in any relationship. Do you sit down with your spouse and talk about what it is that is going on in your life? With out a doubt you have already talked about the argument, probably multiple times, but have you maintained communication?

Do you ever talk about your problems with your spouse? or does your spouse talk to you? if not you should work on communicating a little more.

Another important thing to remember is that the situation is not going to change if you aren’t prepared to make the first move.

If you can make the change, everything else will follow. Try putting your pride aside even if you feel you were right. You have no idea how far such a small gesture like this can go. Ending the argument in this respect will not only prevent more bickering back and forth, but it will show a mature side of you that’s ready to give in to your spouse for the greater good of things. You’ll get the same in return many times over if you make a habit out of this.

Another good way to help with your spousal problems is to consider counseling. I know the idea is never something anyone wants to hear, but it could be the difference between salvaging and losing your relationship.

Almost all couples dread the idea of seeing a counselor. Many couples will wait years and sometimes until it is too late to see a counselor. Don’t be that couple, do what it takes now to strengthen your relationship.

Mark Cella On The Foundation Of Ethics

Mark Cella on the Foundation of Ethics

Better Ethics Stem From Moral Values and a Belief System. Today’s Society is Very Complicated and Corrupt and Better Ethical Direction Will Bring Prosperity.

If ethics is the glue that holds any society together, then better ethics can only make life better for each and everyone in our society. Most Americans have a firm and honest grasp of ethics that governs the way they behave and the choices they make.

It is these ethical stances that dictate whether a community will stand firm together as one, or disintegrate due to the resulting friction brought about differing ethical positions.

Ethical values come under threat by people who are ardent for success by using unethical means. While the pressure to succeed in life can prove too much for some, that is never a good reason for one to abandon ethical values, which are the moral fabrics that keep societies and families together.

The pillars of good ethics such as responsibility, loyalty, and truthfulness assist in making right decisions regardless of the current situation or the environment that individuals may find themselves in at any given time.

Adhering to ethical behavior when faced with tough situations facilitates self-confidence, which is directly attributed to courage, a quality necessary to maintain ethical behavior.

These are qualities that successful people have in abundance and as a result are willing to overcome their fears and take risks in accordance to the principle of success. Better ethics are part of success, and for this reason it is imperative to have the pillars of good ethics be entrenched at an early age.

Mark Cella Why Better Ethics Are Important

The unethical on the other hand result to such tactics as telling lies or cheating due to their fear of failing. The evening news is impregnated with examples of unethical behavior in politics, corporate America, and families.

For example, the unethical behavior of a Susan Smith led to the murder of her two children in October of 1994 when she drown them in a lake in order to revive a relationship with a local man who didn’t want a ready-made family.

The Unethical behavior of former President Bill Clinton, who had intimate relations Monica Lewinsky in the White House and then lied about it, resulted in lowering the standards of our positional presidential candidates, which may have been the direct cause of overlooking the un-convicted felon Barak Obama as a candidate for president.

Mark Cella on the Foundation of Ethics

Ethical behavior is a result of moral beliefs, which stem from a value system often attributed to a foundation spiritual belief or the worship of a higher power.

While a small minority of society races to eradicate any public acknowledgement of God, these same people would be replete to explain their own foundations of right and wrong absent the moral law of the Bible.

Better ethics stem from a sense of right and wrong, good and bad, moral and immoral, which all come from a source, and in America, the source is the Bible. Even the laws of America were established in lock step with the principles of the Bible.

In Washington D. C. you can see a monument of Abraham Lincoln, a true man of freedom who reverberates a sense of right and wrong, an ethical man who said in regards to the Bible:

“In regard to this Great Book, I have but to say, it is the best gift God has given to man. All the good the Savior gave to the world was communicated through this book.”

- The Collected Works of Abraham Lincoln edited by Roy P. Basler, Volume VII, “Reply to Loyal Colored People of Baltimore upon Presentation of a Bible” (September 7, 1864), p. 542.
-

Mark Cella on the Foundation of Ethics

What better ethics is there than to do good to one another in society? But today in America ethics are under attack.

While military’s can protect a nation, and Congress can control the governing of a people, without ethics and ethical behavior a nation is defeated and lost, imprisoned and enslaved, and oppression reins supreme.

Therefore let those who are unethical fail in their pursuits and those who are ethical richly succeed.

But most importantly, let us never forget where the foundations of our ethical behavior stems from, and let us display courage to acknowledge truth, never forgetting that freedom is the result of better ethics from courageous men.

Facing Crisis With A Positive Outlook

July 21st, 2010

What we should do when things go bad.

When the financial market is in chaos all across the world, people consider clinging on to whatever they have and also reduce expenses. And they think that everybody does so, mainly because newspapers proclaim as such.

Everyone ISN`T responding in that manner. There are many people and many ventures that flourish, whether the economy is down or not. And if you are wondering why it is so, the solution is available there where it is often likely to be overlooked. It will be a good idea to search for the answer together.

Whenever there is a downward trend, whatever it is, the best way to overcome it is by rising higher than it. If we drift with the wind and go where it takes us, we might find ourselves in dire straits, waiting for the wind’s mercy for deliverance.

The fact is that when we know our strength and can hold sway over ourselves, we can rise above the mundane and not worry about what is going on all around. Let us visualise it properly.

‘Go-getters’ or ‘Go-givers’

Consider a situation where we want much more - fatter profit, a salary boost, lengthier holidays, better freedom, and better prospects.

When we want something, the first thing we tend to do is to go and get it. So, we call ourselves ‘Go-getters’. And being a ‘go-getter’ is, let’s face it, a sign of leadership, activism and an early-adopter mindset. This is of course one of the keys to the success formulae we often read about. But there is a problem. It turns out that when we use this ’strategy’, there are some unexpected (but quite predictable) consequences.

The gist of the matter is that after ‘getting’ and ‘possessing’ it we tend to ‘get rid of’ it. We might actually jettison it or might become apathetic to the whole idea.

So then we immediately shift our focus to getting more. And here’s the real problem; the more we do that, the more we create a cycle that actually makes us continuously feel as though we do not yet have enough. It’s like a carbohydrate addiction!

But what if we turned our ‘getting’ into giving?

You’ve probably noticed that giving always creates a great feeling. And it comes from gratitude rather than from fear or greed. We can continue to give more and receive more on our now, ever-fulfilling journey.

Our generous and giving attitude creates generous and giving customers and team members while our price consciousness and ‘getting attitude’ attracts precisely those types of customers and team members. And they’re the very ones we don’t want!

Creative capitalism

Most ventures are today aware of the inspiring role of capitalism. They are ever ready to contribute more through many avenues. The idea has strongly impacted the business world as they realise how giving is central to business interests. A typical example is Bill Gates, who expounded the philosophy of ‘Creative Capitalism’ in July 2008 in a TIME magazine article.

He opined that the idea of providing for others could become a crucial factor in encouraging people to buy one product rather than another.

The gist of what Bill Gates is saying is that when an enterprise is associated with the idea of providing in any manner, that enterprise and its products become more appealing to clients. It carves out a niche for itself far above that of others.

Creative Capitalism is the idea of taking things a step higher than the destination at which one would have originally chosen to make the compromise. When we can leverage our visions and initiatives in a way that helps and promotes the needs of the global society, we are conserving things, efforts and abilities in trying to win pro tem. Then we begin fashioning genuine success for us as well as for supporting our global financial system.

The appeal of effective giving

Corporate Social Responsibility (CSR) is the phrase that’s often used to describe giving back at a corporate level. It’s becoming almost a required part of corporate business practice. Yet when it’s done out of a sense of obligation or with the intent to just make ourselves look good, people eventually get what it is. It still is a temporary strategy.

However, ‘giving’ people and businesses always attract more. The passions and beliefs behind what they do are shared with the people with whom they connect. They attract something beyond what the slick PR or marketing campaign provides.

What is likely to be the upshot if some of the capital meant for marketing is apportioned for contributions?

Giving creates something bigger than who we are. Giving creates inspiration. Inspiration can only be created when it resonates with the people whom we want to inspire. And we get inspired when we are involved in the experience. It is not just about hearing the nice stories of others. It’s actually participating in those stories. After all, we all want to feel good in life by making a contribution-to our family and friends, to our company and to our community.

Transaction-based giving causes it to happen on its own

The facility for contributing became so much simpler because of a programme (or one can say a ‘development’) called Buy1GIVE1 (Buy One Give One). Buy1GIVE1 is the heart of transaction-based giving. Transaction-based giving revolutionises things. Let us use our creativity and analyse how.

For example, imagine if every time you had a cup of coffee at your favourite cafe, a child in Africa automatically got access to pure, clean water for one day?

Imagine if every time you subscribed to a magazine you love, a tree got planted automatically just because you bought the magazine? Or every time you dine out, you fed a child in need? Automatically again.

Or let’s say you’re being coached in your business. How interesting would it be to know that a child was educated for one month as a direct result (and by the way, all it cost the coaching company to do that was 60 cents per day).

Or maybe even the speaker you hire for your conference makes sure that kids who can’t speak (because of facial deformities) now can by automatically giving back to a worthy cause connected to those kids. All of a sudden, you feel good too because you’ve done some good!

Imagine the perfect scenario where transaction-based giving can be applied in one’s own special manner to correspond with the available products and services to include every member of the group and customers. It is possible.

The actual winning economy

Business ventures, on a global basis, have already internalized the efficacy of this transaction-based giving. A case in point is TESCO, one of the foremost supermarket chains of UK. The company’s programme ensures that a Kenyan child gets a school uniform when someone buys a pair of school trousers from them.

Volvic is a Mineral Water Company that launched its scheme of transaction-based giving program last year. They help the cause of making wells in Africa. They call the scheme Buy1 GIVE 10 as it helps in generating a flow of 10 litres of water in the well, by every single litre of water they sell.

Lesser to middle level businesses have now begun to spearhead the movement of increasing the idea of global giving through Creative Capitalism. Buy1GIVE1 (www.b1g1.com), a Singapore-based Social Enterprise came up with a procedure that has turned this transaction-based giving into something each and every human being can be part of.

Buy1GIVE1 is the home of the most impactful transaction-based giving in the world because it connects any business of any size to any cause in the world. It’s creating a global community of business givers and for SME`s, Buy1GIVE1 connects businesses, their customers AND charities in a way that hasn’t been done before. And it all happens automatically.

Any person can become a citizen of this phenomenon of global giving merely by getting a Buy1GIVE1 `VISA` directly off the Buy1GIVE1 site at www.b1g1.com. Those who have their own enterprise can become a B1G1 Business through applying online and selecting the charity and the primary service or product for launching the giving. Buy1GIVE1 forwards the entire contribution amount to their international Worthy Cause Partners (more than 528 projects are available for members to choose from) thereby making their contributions highly productive.

Finding what we are looking for-Nature gives us the clue

So let’s come back to where we started-economic turmoil and getting what we want. What we all really want is actually very simple. You can sum it up with ‘C’ words - connection, collaboration and community.

When we can team up rather than break up and thus create a perfect way to combine resources rather than carry away from one another, we will perceive that there is so much more profusion and so many reserves present on the planet. And when we build relationships, not just with one another but with our innate selves, we understand something infinitely beautiful-that we’re all ONE. Then we realise how simple it is to form an international society from something as commonplace as giving.

And nature gives us a real clue to that.

In earth’s natural workshop, beautiful butterflies fertilize flowers and help to produce gardens that continue generation after generation. It was there even before recorded history.

Failures are said to be stepping stones to success. In the same way we can turn setbacks into advantages. In reality we should be thankful for the current situation that is helping us to move ahead.

And when a person chooses to donate now itself, in spite of the financial crisis, he will feel more contended. And with this contentment he will find a hope that is rekindled anew, which will ring a bell on how the ebb and flow of things can change. Today’s charity might be that which will reverse the flow.

Several Mistakes You Have To Avoid Doing If You Want To Get A Great Scholarship

July 17th, 2010

Thinking about graduate school? Then you’re probably also thinking about financing your graduate school education! You can find scholarships to help you pay the educational tab, but it will require some work on your part.

There is an application process for graduate school funding. You have to complete your application in the right way and avoid any pitfalls that could cause you to be rejected. Here are some fatal mistakes you will want to avoid.

Being slack about responding to opportunity is a big mistake. Good scholarships for funding your graduate education don’t come around every day. This being the case, when you find one that you think will suit your needs, you need to get right on it.

Putting off the application process just reduces your chances of being the lucky student who is chosen. It is far better to take sufficient time to find, and apply for, the right funding for you. Start as early as eighteen months before you will begin your graduate program. Believe it or not this is not too early.

If you don’t give yourself sufficient lead time you may miss out. You should expect to need to send in materials with your application. It can take a while to get all of your materials together, and it would be unfortunate to miss a deadline because you couldn’t get your documentation in time.

Don’t be too lazy to do some homework. Your scholarship won’t come looking for you - you have to hunt for it! Some people just search briefly and find an opportunity and figure that this is good enough, because they don’t want to put in more effort. That’s a mistake, especially as easy as it is to access all the information you need online or even locally.

There are also going to be specific resources that are matched to your graduate program. Try to see what resources already exist where you will be going to school as well.

You also need to be familiar with the various forms that need filling out. Like all other administrative tasks, applying for financial aid requires a good bit of paperwork. Don’t guess and make errors. If you need help, ask a financial aid counselor to explain the form to you and help you apply.

The author additionally regularly contributes articles about subject such as pool thermometer and non contact infrared digital thermometer.

Interaction Is Important In Any Type Of Relationship

June 24th, 2010

You wake up one morning and realize that your relationship that you thought would last a lifetime has soured. What on earth happened? You stop and think, soon realizing that neither of you are talking. Oh yeah, you may say words to each other, but you aren’t communicating what you are really thinking and feeling.

Every couple has their rough spots in the first few years, but if you don’t talk about them and deal with them, they will only get worse. If you don’t learn communication in the early years, don’t expect things to get better. They will only get worse without communication.

So, you realize you have a problem. You decide that you need to start communicating with each other. How are you going to do that?

When a couple decides to go to counseling or therapy together, the are basically asking for a referee so they can have a decent conversation. Why would two people who love each other need a referee? Well often, if a couple is talking about something that is highly emotional to them, voices can get raised and the conversation heated. A referee (counselor or therapist) can prevent things from getting to far out of control.

You may think that the therapist has done nothing but sit there listening to you two talk, but they may have done more than you realize. They have kept things from turning into a verbal war.

It is helpful to have a therapist or counselor who will give sound advice, but the best thing they could possibly do for you as a couple is to get you talking to each other again. If you can begin communication again, your relationship will likely last, and will not end in divorce court.

The problems that a couple are having may range from petty annoyances to moral issues. The most important thing is to talk about it openly and honestly, even if it is uncomfortable.

If you refuse to communicate with your partner, eventually your problems will seem bigger than what you can deal with and you will feel compelled to terminate the relationship. Keep talking and you can work things out.

Aside from relationships, this author also regularly shares writing about 90 inch round tablecloth and vinyl floor tile.

Buying Scent For Yourself

June 12th, 2010

Most people use perfume of one kind or another, whether its purpose is to cover up potential body odour or just for fun. When I say ‘fun’, I mean ‘pleasure’ or to attract admirers, whether you aim to do anything about them or not. There are literally thousands of scents to pick from and they are priced from cheap to exorbitantly expensive. So, when there are so many choices, how do you know which ones are right for you?

There are a few rules of thumb that you can use as guidelines to help you choose which scent is right for you. Firstly, you will need to know a little about the basic varieties of perfume available, before you can find out which brand of will suit you the best.

So, you can begin by taking a look at the ingredients on the bottle. From these ingredients you can determine what type of fragrance is in the bottle. The basic varieties of scent are: light musk, natural scent, loud fragrance, floral fragrance, warm fragrance, bright cheerful scent and a few others.

You should get a small note book and make notes when you test perfumes in various department stores. Perhaps you will find musk too overwhelming for you or perhaps you do not want to smell like a garden flower. It is all very individual and personal. No one can say that you are right or wrong.

One’s body chemistry plays a huge part in why a will smell exquisite on your friend, but not so well on you. It is just a fact, that you cannot go by what smells good on someone else.

Perfumes that are made from natural substances such as flowers, herbs or spices and even fruit tend to smell warm and soft. Examples of this type or fragrance are rose and lily of the valley. Musk, however, may be made to produce a light fragrance that lingers softly around you, but it can be strong and heady too.

You may discover that you like a scent, but that it is just too overpowering for you. If that is the situation, you may be able to get it in Eau de Cologne or Toilet Water, which are weaker in dilution. Other than that, you could use less or dab it on the underside of your clothing where it might not be subject to so much body heat and so will not disperse quite so quickly.

If you go about selecting the right perfume for yourself methodically, it could take quite some time to come across something that is ‘Essence De You’, but it is well worth it. What is a year, when you can wear the perfume for forty years? This is why I recommended getting a little note pad to keep in your bag before doing the rounds of the free trial counters in the department stores.

The salesgirls won’t mind, they will be pleased to show off their knowledge and be delighted that someone is taking a real interest in their merchandise. Then, once you have one, you could start all over again, if you enjoyed finding the first , but next time you will have a notebook full of suggestions.

The Origins Of Chocolate

June 6th, 2010

The Theobroma Cacao or ‘the food of the Gods’ is what we all know as the cocoa tree. It’s origins can be traced back to South America’s rain forests, particularly to Central America, although historians are still debating over certain facts with regard to this tree.

It is suggested that the Mayans first grew the cacao tree in 300 AD, although others point to inadequate evidence that it was grown or at least harvested in around 3,000 BC. The Aztecs also used the cacao, but from about 1100 AD.

The chocolate (drink) that we all know today was called ‘xocoatl’. It was a very exclusive beverage that was made with cacao, chilies, anise seed, vanilla, corn meal and some other spices. It is believed that only royalty were allowed to drink it and then only from golden chalices, which were to be used for the purpose only once.

The cacao tree is very responsive to its environment and it most frequently grows in the shade of the rain forest canopy. If only for this reason alone, chocolate lovers should join forces with the environmentalists to save the rain forests so that the cacaos will continue to exist.

This tree is unusual because its fruits grow directly on its branches and trunk; midges cause the pollination of the flowers during the night time.

The cacao tree is very productive, but not very fruitful. It can have in the region of 10,000 blossoms, but only about 10 to 50 of those will mature into fruits or pods. This is thought to be because the cacao tree can adjust the number of blossoms that will mature according to its ability to handle the energy loss of bearing fruit or pods.

The cacao tree regulates itself in this way to maintain its health. Too many pods might exhaust its energy so much that it could not survive a viral or insect attack or too many ripe pods might snap off its branches.

The cocoa beans grow within the pod, the fruit of the blossom. Harvesters wait for the pod to ripen. They will then crack open the pods and take out the seeds, which are surrounded by a white pulp. This is discarded these days, but it is thought that many years ago it was fermented into an alcoholic drink for ceremonial purposes. The beans are the source of chocolate, although there is lots to do yet..

The seeds are very bitter at this stage and it is for this reason that they will go through a procedure of fermentation for between three and seven days. This causes the seeds to go through chemical as well as physical changes. The result of this was used for the royal drink, the ‘xocoatl’.

However, to turn it into what we know as chocolate, the fermented beans need to go through quite a few more procedures. Processes by the name of: drying, cleaning, roasting, grading, opening, separation, grinding and liquefying.

After liquefying, you have pure chocolate in the form of chocolate liquor. This is sold to chocolate producers and the good ones make high-class chocolate from it and the bad ones adulterate it so much that it is hardly chocolate any more.

Owen Jones, the author of this article, writes on many topics, but is currently involved with Gourmet Chocolate Candy. If you have an interest in romantic gifts, please go over to our website now at Romantic Gifts: Ideas

Who Is Poor? - The Religious Concept

May 25th, 2010

One day Prophet of Islam, Muhammad (May Allah’s peace and blessing be on him) asked his dear companions whether they knew who a poor person really is. They all answered that a poor person is the one without any money or wealth. Then he told them as follows:

“Among my community the deprived person is the one who will appear on the Day of Judgment before Allah: Such a person had observed prayers; he had paid his compulsory alms; he had observed his compulsory fasting; But he would have ill-treated somebody, he would have falsely accused someone;

He would have taken someone else belongings with no authority; he would have assassinated someone; he would have struck somebody. All his rewards will be given to the people he offended. If his virtues have finished before his wicked deeds have finished, the errors and sins of the victims would be given to him and he would be thrown into Hell.”

Prophet of Allah, Muhammad (May Allah’s peace and blessing be on him) has said the reality. Such a man is really broke. His state is like that trader who has goods worth one thousand rupees but he is a debtor for two thousand rupees. How can such a man be called affluent?

A spiritual man who offers certain prayers or performs certain forms of veneration but even after that commits some forms of malevolent activities, behaves rudely with the people, treats poor and the hopeless people cruelly, how can such a man be called honorable?

The Prophet of Allah, Muhammad (May Allah’s peace and blessing be on him) has thus made this clear by quoting an instance. He said that the best moral character melts error like water and bad morals spoils man’s record as vinegar destroys honey.

As adherents of Islam we should therefore endeavor as much as possible to steer clear of hurting other people’s emotion whether through our utterances or actions. It is not enough struggling to do his duties to Allah in forms of prayers or giving necessary alms whereas neglecting his duties towards others or even depriving them of their rights.

Every equation must be balanced on the Day of Judgment. Every person will claim his right that has been taken away from him or her while on the Earth. The reward is either used to compensate or the sins of the victims are added to the culprit’s load.

A Devotion To Chocolate For The Connoisseur

May 10th, 2010

I have several questions for you first of all. Do you like chocolate? Or does it go further than that? Do you love chocolate are you what is called a chocoholic? And lastly, was that attitude fashioned by store-bought chocolate such as Mars Bars, Galaxy and Snickers?

I asked all those questions because, if you love chocolate and all you have ever tasted is store-bought chocolate, you have a real surprise waiting for you one day. A really fantastic revelation. One day you will taste gourmet chocolate and it will bowl you over. It will make you regret all those days of your life that you had not known it.

Gourmet chocolate is to a Mars Bar what fillet mignon is to a beef sandwich or what champagne is to cheap wine. It sounds as if I am running Mars Bars down and I suppose I am in a way, but I do believe that they have their place in the hierarchy of the world of chocolate, it is just not near the top and when you have tried gourmet chocolate, you will agree with me.

You will see the light and realize that maybe you used to eat store chocolate for the sugar rush and not for the chocolate, because the store variety is actually a very watered down version of the real thing. If you do not believe me, look at the contents list on the back of the wrapper.

Dark chocolate is produced by adding fat and sugar to the cacao mixture. The U.S. Government calls this “sweet chocolate”, and demands a 15% concentration of chocolate liquor. European regulations stipulate a minimum of 35% cocoa solids. It does not sound very much, does it? (By the way, chocolate liquor is like lumpy custard and if you pulverize the lumps and remove most of the fat, you get cocoa solids).

This is why European chocolate has a better reputation than American chocolate in general, although there are excellent gourmet chocolate makers in the USA (called chocolatiers; like a chef is to haute cuisine)..

Some inexpensive chocolates are even blended with wax and most bakery chocolate products have very little, if any, real chocolate in them! They contain mostly sugar of one kind or another and “partially hydrogenated palm oil.” On the other hand, gourmet chocolate will reflect the quality of the ingredients, which includes high quality cocoa beans, no preserving agents or vegetable fats (other than cocoa butter) and sugar, which is also a preserving agent, should only be used in moderation.

Some chocolate is made from only one variety of bean, just like some wine is made from one kind of gape and some whisky is single malt, but most is made from a blend of several kinds of beans again lust like the cheaper wines and whiskeys. Gourmet chocolate has a far greater percentage of cocoa butter, and will be more extensively refined.

Aficionados of gourmet chocolate are like connoisseurs of fine wines and single malt whiskies, they appreciate the object of their affection. In time, they can talk about the advantages of one bean or process over another. If you want to go down this road, you could join one of the many good gourmet chocolate clubs on the Internet
